All are fully dedicated workshops: no wheat flour ever enters them, so there’s no risk of airborne flour — the number one danger in a standard bakery. Here’s the list, region by region.

Île-de-France
- Boulangerie Chambelland (Paris, 11th arrondissement) — the pioneer, AFDIAG-certified, which mills its own rice and buckwheat flours in-house.
- Copains — now the largest 100% gluten-free chain in the country: 22 shops across Paris, from Tiquetonne to Abbesses, all listed arrondissement by arrondissement in our Paris guide, plus seven more around the city: Vincennes, Boulogne-Billancourt, Levallois-Perret, Neuilly-sur-Seine, La Défense, Saint-Germain-en-Laye and Parly 2. Certified oats in some recipes.
- La Manufacture du Sans Gluten (Montmartre) — rice, buckwheat and chestnut flours.
- Maison Plume (Le Marais) — entremets and travel cakes.
Alsace
- L’Eden Libre de Gluten — Alsace’s first 100% gluten-free establishment (2015), in Obernai and Strasbourg.
- La Mie Lucius (Rixheim, near Mulhouse) — organic, gluten-free and lactose-free, the only one making its own gluten-free puff pastry.
Auvergne-Rhône-Alpes
- Les Gasteliers (Lyon) — Lyon’s first 100% gluten-free bakery-pâtisserie, with a chocolate shop and catering.
- Copains (Lyon) — three shops: Presqu’île, cours Vitton and rue Antoine-Lumière.
- Gourmand Sans Gluten (Cournon-d’Auvergne) — 100% gluten-free and peanut-free, near Clermont-Ferrand.
Provence-Alpes-Côte d’Azur
- La Pépite (Marseille) — breads, vegan pizzas and pissaladière, gluten-free and lactose-free.
- La Manufacture Bio (Aix-en-Provence) — run by Franck Belleton, a pastry chef who is himself coeliac.
- L’Atelier du Mochi (Aix-en-Provence) — handmade mochi, by a duo trained in Japan.
- Maison Folius (Carqueiranne) — plant-based, gluten-free, free from lactose and refined sugar, facing the harbour.
- Mac & Choc (Six-Fours-les-Plages) — born from Damien’s intolerance, a trained baker. 4.9 on Google.
- Amour Pâtisserie Végétale (Nice) — 100% plant-based and gluten-free.
Nouvelle-Aquitaine
- BAG — Bakery Art Gallery (Bordeaux) — the region’s first organic, gluten-free bakery, doubling as an art gallery.
- Copains (Bordeaux) — two shops opened in 2026, rue Sainte-Catherine and rue des Remparts.
- Dessine-moi un gâteau sans gluten (La Teste-de-Buch) — the only 100% gluten-free pastry shop on the Arcachon Bay.
- No Gluten Lover’s (La Rochelle) — concept store and caterer, 4.9 on Google.
- 100 Biscuits (Brive-la-Gaillarde) — award-winning biscuit maker, gluten-free and lactose-free.
Elsewhere in France
- Flavors d’Amarante (Montpellier) — gluten-free and lactose-free, with savoury lunch options.
- La cabane des gourmand·e·s (Angers) — tea room with a play corner for children.
- Og Boulangerie (Villeneuve-d’Ascq, near Lille) — natural sourdough, organic, gluten-free and lactose-free.
- Apporte Le Dessert (Dole) — gluten-free, lactose-free and egg-free: Macvin canelés, pavlova.
- And just across the Basque border: Amets Bakery (Irun), run by two coeliac sisters.
Good to know before you go
