Sources — Primary source: the official site igelatidipiero.it, 'Gelati senza glutine' page, which explicitly states 'Ai soggetti celiaci e intolleranti al glutine dedichiamo alcuni nostri gusti, lavorati separatamente' (for celiac and gluten-intolerant customers we dedicate some of our flavors, worked separately) — meaning ONLY certain flavors, not the whole menu.
